Recipe For: No Cook Caprese Sandwiches
You will need:
-French bread or similar loaf of bread (artisian bread works nicely, too)
-Tomatoes (I prefer beefsteak for this, but you can use whatever kind you want!)
-Fresh Basil*
-Fresh monzerella (buffalo or similar)
-olive oil & balsamic vinegar
-salt and pepper
1. Cut your bread in half or thirds depending on the size sandwiches you want to make. Then, carefully cut it down the middle to make the two halves. I also like to scoop a little bit of the bread out so everything fits nicely in (less carbs too!)
2. Sprinkle each half with oil and balsamic vinegar.
3. Slice tomatoes and cheese. Layer tomatoes, then cheese, then fresh basil leaves onto the bottom half of each sandwich. I use 3-4 slices of tomato and cheese each per sandwich. Sprinkle with salt and pepper to taste and voila!
*Most grocery stores sell basil plants in the produce department or you could buy it at your local farmers market. Usually for around $3 -$5 you get the plant and if you take care of it you can use it all summer!

I love Caprese anything! I might make ahead some roasted eggplant and add that to the sandwich, too!
So I love mozzerella… and I order Caprese salads all the time. But because I don't like tomatoes people think its weird. Ce la vie!
