Lately Carter has been asking for popsicles all the time! He wants them for snack, for dinner, after dinner and even for breakfast! Of course I don’t want to give him a “treat” for breakfast (or all those other times for that matter!) so what better way to combat that then to create my own popsicles that are breakfast friendly
Popsicles aren’t your normal “breakfast food,” but these are so simple and contain all healthy ingredients that you figure why not?! I also love the added benefits of using the ZICO coconut water as the base! Carter is a big fan of coconut water, so this recipe is perfect for him!
Recipe for Blueberry-Coconut Breakfast Popsicles
Here is what you need:
- 1 cup of blueberries (washed)
- 5-6 medium size strawberries (washed and trimmed)
- 1 cup of ZICO coconut water
- Popsicle molds
Add everything to a food processor or blender and blend until it’s a smooth liquid.
Carefully pour the mix into your popsicle molds. I transferred it into a measuring cup so it would pour easier. Transfer to freezer and let them freeze overnight.
Voila! The finished popsicles. Although this recipe contains coconut water, you really get the fruit taste in the popsicles when you eat them. I love how simple these were to make, and how many variations you can create by adding other fruits, or even shredded coconut or grains such as flax seed!

totally making these! I love using coconut water for our smoothies but I never thought about using it for a popsicle
I do this all the time for my daughter! Blend up a bunch of fruit, freeze it, and voila she has healthy popsicles. Haven't tried the coconut water yet.
