I’ve always loved peach bellini’s when I go to restaurants and then one day it occurred to me, hey, I can make this at home and enjoy this delicious cocktail whenever I want!
I used to work in a smoothie shop and we would always add peach flavoring to the smoothies that had “peaches” in them along with the peach slices because the frozen peaches don’t seem to have that big peachy flavor to them. You could use fresh peaches, of course, but I think frozen ones are better for this recipe to keep it nice and cool. I kept my eye out for a peach juice and then I found peach nectar in the “international” aisle at my grocery store!
All you need is:
- frozen peaches (1 cup)
- peach nectar (6 tablespoons)
- champagne (1 bottle)
Blend the peaches and nectar together in a food processor until desired consistency. Ours was mostly smooth but also had tiny bits of peach! Spoon the peach mixture into your wine glasses, then slowly add champagne to each (s-l-o-w-l-y)! This makes about 4-5 bellinis depending on how much champagne you use for each! And they are delicious!
