Summer cooking for me is all about trying new fresh ingredients and keeping it cool by having meals that don’t require a lot of actual cooking! That’s why I love smoothies and salads so much for summer, they make the perfect combination of a cool and deliciously filling meal.
This summer I’ve been trying out the Ready Pac Bistro Bowl salads from Wegman’s as an awesome go-to for a quick lunch at home or out!
Last weekend we headed to Valley Forge to our normal picnic spot with some friends and I brought along the Santa Fe style salad from Ready Pac! It was amazing and so perfect for a picnic- everything is included, even the fork. It had salad, dressing and toppings, including chicken, all ready to mix together.
Later I tried another Ready Pac Bistro Bowl at home and decided to make a tropical smoothie to go along with it! I used frozen fruit and vanilla yogurt from Wegmans in my smoothie.
Tropical Summer Smoothie
You will need:
- 1 1/2 – 2 cups frozen or fresh topical fruit- I used mixed frozen fruit which included mango, peaches, strawberries and pineapple.
- 3/4 cup Orange-Pineapple-Mango juice (or similar “tropical” juice)
- 1 container vanilla yogurt (about half a cup) or slightly more as desired
Throw it all in your blender and blend until smooth! I prefer to use frozen fruit so that I don’t have to add ice. Top with a pineapple slice and straw.
