Welcome to the first week of Mini Chef Mondays! Each week we will share a recipe or fun post related to kids cooking and helping in the kitchen! My son is 3 years old and loves to help me cook. In these post I will share which steps I let him help with and which ones are for the “grown ups” only! You can modify it to fit your own children’s ages, of course!
This week Carter and I are sharing our yummy and easy chicken salad recipe!
I actually have always liked chicken salad, but I tend to never order it at restaurants or eat it at parties because almost 100% of the time, it has celery or nuts in it. I just cannot stand celery and avoid eating anything that has celery as an ingredient! An easy solution, of course, is to just make my own chicken salad at home so I can add whatever I want! This chicken salad only has a few ingredients and is kid friendly. We made a big batch and it lasted for several days in the fridge, so we had a ready made lunch!
Easy Chicken Salad
You will need:
- 3- 4 chicken breasts
- 1 large cucumber, sliced and cut into fourths
- mayo of choice (about 1/4 cup)
- dijon mustard (1 tablespoon or more to taste)
- oregano (tarragon would be nice, too)
- salt and pepper
Add the chicken and cucumbers to a large bowl.
Then, add the mayo. Carter loved squeezing it in!
Next, add the dijon mustard. I let my son scoop it from the jar.
Shake on the spices and then stir it all up! We added salt, pepper and oregano. You could also use tarragon instead of oregano.
Serve and enjoy! Carter loved eating his dinner that night since he helped make it, and he ate every bite! That alone gives me more reason to let him help in the kitchen once and awhile!
