Welcome back to Mini Chef Mondays! This week Carter and I headed over to a new friend’s house to learn a Swiss dessert recipe! We learned how to make Zwetschgenwähe, a very versatile Swiss dish! Almost every step is kid friendly with just a little bit of parent assistance, depending on the age of your kid. This is a very easy fruit pie with a custard like filling. We used plums, but you can also use apricots, apples or cherries so it’s very easy to customize!
What is Zwetschgenwähe?
Zwetschgenwähe, or Wähe, is a very old Swiss dish dating back hundreds of years! The dish is made with a pie crust base that is then topped either sweet or savory toppings and a custard like filling. For sweet Wahe a mixture of ground nuts and fruit is used. For savory dishes you can use meats (such a bacon) cheese, onions etc. The dish is then filled in with the egg mixture and baked to set. Zwetschgenwähe can be used as a full meal, both the sweet or savory versions!
How to make Zwetschgenwähe Plum Pie:
This is a great dish to make together with your kids! It’s fairly easy to do and fun to place around the fruit, mix the custard and pour it on! It’s a perfect dish for a rainy afternoon or an easy weeknight dinner or dessert! You can even make a savory version to use up some leftovers from the week, or use up those few last extra veggies you have in the fridge.
Start by spreading the pie crust out over a large pie pan. Then, use a fork to poke some holes around the bottom of the crust. Sprinkle the ground nuts or course flour evenly over the crust. We used almond flour.
Add the fruit, filling up the pan. We used a bag of frozen plums. Of course you can also use fresh, just be sure to take the pits out first! You can really use any stone fruit for this recipe, fresh or frozen. Try cherries or apricots! You’ll need about 4 cups of pitted and halved fruit to fill up the pan.
Make silly faces when mom tries to get a decent photo of the pie!
Slice and enjoy!
Zwetschgenwähe: Swiss Plum Pie Recipe!
Ingredients
- 1 pie crust- homemade or store bought
- 3 tablespoons ground hazelnuts, or other similar course flour such as almond, coconut or even cornmeal. (to soak up the fruit juices)
- 850g frozen plums (about 4 cups) or other fruit of choice.
- 1 cup milk
- 1/2 cup cream
- 1 egg
- 3 tablespoons sugar, plus extra for dusting if desired.
Instructions
- Preheat the oven to 425F
- Spread pie crust out over a large pie pan. Use a fork to poke some holes around the bottom of the crust.
- Sprinkle the ground nuts/course flour evenly over the crust.
- Add the fruit, filling up the pan.
- Mix together the milk, cream, egg and sugar. Be sure to mix briskly so all the sugar doesn't sink to the bottom!
- Pour the milk mixture over the fruit all around the pan.
- Bake in preheated oven about 45 minutes or until custard is set. Optional: sprinkle sugar over the finished pie. I would recommend this step, as the custard is not super sweet
- Slice and enjoy!
Have you ever made a pie similar to this? What fruit would you use? I’m going to try it with cherries next time!
