Welcome back to Mini Chef Mondays! This week we are visiting family in Florida and Carter had the chance to try out a recipe with my aunt! We made mini pizza tacos, which turned out so cute and very easy and fun to make! They would be a great snack, lunch or even an appetizer.
Mini Pizza Tacos
You will need:
- flour tortillas- any size
- pizza sauce
- shredded mozzarella cheese
- any other pizza toppings you like (mini pepperonis would be perfect, or cut up veggies)
- cooking spray
- Equipment: biscuit cutter, baking sheet, cooling wire rack
Use the biscuit cutter to cut small circle out of the tortillas. If you don’t have one, you can use a circle cookie cutter or cut around a glass to make your circles.
Note: your child may need help with this step, especially if the tortillas are thick!
Place the tortilla mini circles over the wire rack as shown above, so they hang down. I used ramekins to raise the wire rack, or if you have one with feet attached that would be perfect. Bake at 350F for about 8-9 minutes, until they are firm and form the mini taco shells. Don’t over bake, or they may burn!
Scoop about 1/2 teaspoon of sauce into each shell.
Add the cheese into each taco and any other toppings you want! Prepare the baking sheet with cooking spray (don’t skip this step, they will stick!) and place each one on the baking sheet. Return to oven to cook for about 2-3 minutes, so the cheese melts.
Serve and enjoy!
