This week we’re continuing with our fruit theme and dishing up some homemade gummy fruit snacks! These fruit snacks are made with unflavored gelatin and you can cut them into any shape for a fun fruit snack!
Homemade Berry Fruit Snacks
You will need:
- 1 cup blueberry juice
- 2 cups strawberries, cut into fourths
- 2 teaspoons sugar
- 5 packets of Knox unflavored gelatin, or equivalent gelatin sheets/leafs (approx 3 sheets per packet)
Cut up strawberries and add to a small saucepan. It also helps with the fruit flavor if you pause to take a photo!
Add sugar to strawberries.
Measure out juice and add to saucepan. Heat the mixture until strawberries are nice and soft.
Next, add the berry mixture to your blender and blend until smooth. Be sure to allow the mixture to vent, since it is still very hot!
Let the mixture cool for a few minutes before adding your gelatin. Add gelatin and let it sit for a few moments to absorb, then blend it in.
Pour berry mixture into a shallow pan or cookie sheet with high sides. How thick you want to make your fruit snacks will be the depth here. Cool in fridge for at least 2 hours, or until it’s set.
Use small cookie cutters to cut shapes out to make your fruit snacks. You can also just use a knife and cut them into small squares, whatever works for you!
Serve and enjoy!
