Welcome back to Mini Chef Mondays. We took a little break last week for the holiday, but we’re all back this week with new kid friendly recipes as usual! This week we created a special drink- surprise razzmatazz lemonade! We created special ice cubes that you simply add to a cup and pour water over to create a fun and magical lemonade!
Razzmatazz Iced Lemonade
You will need
- 5-6 medium lemons
- 1 cup fresh or frozen raspberries, plus extras for garnish if desired
- 1 1/2 cups water, divided
- 1 cup sugar
Cut the lemons in half and juice each one. You will have approximately 1/2 cup lemon juice, give or take. Add 1/2 cup of water to the lemon juice.
Carefully pour the lemon juice mixture into ice cube trays and set in the freezer to freeze.
For the raspberry ice, add raspberries, sugar and 1 cup water to a saucepan and bring to a boil. Allow to cook a few minutes, stirring so it doesn’t burn, until the sugar is fully dissolved and the raspberries are cooked and soft. Remove from heat. (Depending on the age of your kids, this might an “adults” step.)
Next, pour the mixture through a strainer to removed the raspberry bits, saving the raspberry simple syrup in a measuring cup or similar. Pour this mixture into an ice cube tray that makes small ice cubs. As the syrup is a very strong flavor you won’t need very much for your lemonade!
Let the ice cubes freeze overnight.
Add ice cubes to a glass in the mixture of your choice! We did 3 lemon cubes and 2 small raspberry cubes. The lemon flavor was a bit strong so I would recommend 1 or 2 lemon ice cubes. Try different combinations to see which one you prefer! Pour water or sparkling water over the cubes to make your lemonade! The raspberry ice melts immediately, but the lemon takes a little longer. For an “adults only” option, you could add a few of the raspberry cubes to a wine glass and pour some champagne over it.
