Watermelon is one of my favorite fruits for summer, and watermelon juice is simple to make and delicious! This was actually one of Carter’s ideas which I gladly went along with! Watermelon is actually very healthy and contains a lot of good vitamins (C, A and B6), antioxidants and, of course, plenty of water to keep you hydrated.
Watermelon juice is super simple to make, but a little time consuming because you have to remove the seeds. Chop up a watermelon, removing any seeds as you go. Fill up your blender with watermelon pieces and add a little water or lime juice to get the blending started.
Blend for a few minutes until its all liquid, you want as little pulp as possible, and as much juice as possible. If you have a very large watermelon, work in batches until the whole thing is blended up.
Optional: Carefully pour juice through a mesh strainer to remove any extra pulp and seed pieces you may have missed. You can skip this step if you like the pulp, we only did it for half the batch! Use the back of a rubber spatula to press the juice through the strainer.
Store juice in the fridge and serve cold. The size of the watermelon you have will depend on how much juice you get, but in general it will be less than you think. This is fun summer afternoon activity and snack to do together with your kids!
