Fresh peaches make these granola cups a perfect summer treat!
Last weekend we went peach picking so now we’re in peach overload! It’s the perfect time to make a ton of yummy peach recipes and this one packs a triple punch as you can make it for dessert, snack or even breakfast! We made our granola cups using a muffin tin so they are they perfect size for a two bite (or three!) treat.
Mix your favorite granola with honey until well coated. We used Bear Naked brand granola in triple berry flavor. However, I would recommend using a granola with little to no dried fruit a the fruit tended to get crispy in the oven.
Scoop the mixture into a greased muffin pan. Press down on each one to squish all the granola together in the cups. Bake 15-20 minutes at 300F.
While the granola cups are baking, peel and slice the peaches. Toss the peaches with cinnamon and sugar and set aside. You could also do this step ahead of time and let the peaches soak in the cinnamon and sugar for extra yummy-ness (I believe that’s the technical term).
Mini Chef Tip: a super easy way to peel ripe peaches is to pop them into a large pot of boiling water for about 30 seconds. Removed from the water and dunk into a bowl of ice water to cool them off, then the peeling will slide right off with a little tug!
Allow the baked granola cups to cool, then remove them from the muffin pan. You may need to loosen them out with a spoon or butter knife first. Top with peach mixture. For dessert, top with whipped cream or a scoop of vanilla ice cream. For a snack or breakfast top or mix with vanilla yogurt!
