This layered gingerbread cake is so delicious you’ll want to share it with all your friends!
If you love gingerbread then this cake is for you! Gingerbread is a perfect holiday treat and you can serve this from Thanksgiving to Christmas. This cake uses the basic gingerbread boxed cake mix with a few twists to make it extra fun! I brought this over to our neighbors house for dessert the other night and everyone loved it! To make the cake just follow the directions the box, adding in a few extra spices for fun. Scroll down for the full recipe and directions!
The filling is a yummy vanilla whipped cream based mousse, which you can easily make yourself. Or, you could make it semi-homemade by using thawed out frozen whipped topping! To make the filling you will whip heavy cream with vanilla and sugar until stiff peaks form. Then, mix it together with your cream cheese mixture.
Top the cake with some cookie cutters and sprinkle on powdered sugar. For Christmas you could use Christmas tree cookie cutters, stars, or even gingerbread men! For Thanksgiving try some turkey shapes, or festive fall leaves and acorns. Or, leave of the shapes and just do a dusting of sugar!
Layered Gingerbread Cake Recipe
Spruce up a box of gingerbread cake mix with some homemade vanilla mousse! *alternately you could use 1 cup of thawed frozen whipped topping instead of making your own whipped cream **you may have extra mousse, depending on how thick you make the layer. Cover and refrigerate any extra to enjoy later! Add extra spice to the cake by adding 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg to the mousse!
