If you waited until the last minute to get your Christmas baking in, have no fear! I’ve got two super easy and delicious Christmas cookies for you to make! Both of these cookies require very little prep work or decorating work, so you’ll save some time! These are perfect for gifting, cookie exchange, holiday parties or just to enjoy yourself! I decided to put them both in one post because they’re so easy to make, they don’t require a ton of direction.
Cookie 1: Mint Chocolate Wafers
These cookies are one of my favorites to make every year for Christmas! They are “semi-homemade” cookies that only require two ingredients: chocolate wafer cookies and candy cane Hershey kisses. The cookies I use are called “famous chocolate wafers” and they come in a small, long box. They break easily so be sure to handle with care!
To make: Preheat the oven to 300f. Spread the cookies out over a baking sheet. Unwrap the Hershey kisses and place one on each cookie. Bake in oven until chocolate is melted, it usually takes about 5 minutes. Then, use the bake of a spoon to press down the kisses and spread the chocolate around. Allow to cool off and set before serving and that’s it!
Cookie 2: Gingerbread Cinnamon Stained Glass Cookies
These take a little longer to make than the mint cookies, but are so cute and tasty! To make the inside you will need cinnamon imperials (aka red hots!), which really pair nicely with gingerbread cookies by the way! We use them regularly to decorate gingerbread cookies so this seemed like a logical next step to me!
After some experimentation I learned that you do need to crunch the red hots up before baking, otherwise they just kind of bubble up and don’t spread out for that nice “glass” look.
The final product! I loved the way these turned out! Of course not each and every one came out perfectly, but that’s fine! They still taste the same either way!
Red hots can usually be found by the the sprinkles in the baking section at your local grocery store or Target/Walmart. Sometimes they are also in larger bags in the candy section, especially during the holidays and Valentine's Day.Gingerbread Cinnamon Stained Glass Cookies
