After making a couple of batches of boozy gummy bears I was ready to take it up a notch! I was wondering what would make my boozy gummy bears even better and it came to me- chocolate! I modeled these gummy bears after one of my moms favorite treats- chocolate covered cherries.
Does anyone else associate cherry cordials with Christmas time, or is it just me? I don’t normally eat them but at Christmas my mom always asks for them in our stocking exchange so I’ve come to view them as a special Christmas treat. But, no worries, these gummies can be enjoyed year round!
As you can see, the chocolate doesn’t go perfectly over every single one. But I figure it doesn’t matter because it still tastes the same! Also, they’re pretty cute anyways. I add in a little coconut oil to the chocolate which helps keep it smooth. This helps it form around the bear shapes a little better so it’s not all one big blob! As you can see from my pictures this was a trial and error and several of them were blob-like before I figured this out!
Because the chocolate dipping step takes some time, these gummies take a little longer to make than my basic ones. The plain gummy bears take about 10 minutes to make and a few hours to set in the fridge. The added step of the chocolate takes about 20-25 extra minutes after that so be sure to factor in the extra time!
