Strawberry Blueberry Swirl Fruit Leather!

This week for Mini Chef Mondays we made a delicious fruit leather recipe! We love fruit around here and I am always trying to think of new ways to cook with fruit because it’s one of Carter’s favorite snacks.  Although he’s never had real fruit roll ups, he really enjoyed making and trying this recipe!

This week Carter also got to try out his new chef’s hat and apron courtesy of Handstand Kids!  Handstand Kids is a kids cooking company that sells accessories, cooking supplies and cooking kits all for kids to get in the kitchen and cook! Strawberry Blueberry Swirl Fruit Leather

You will need:

  • 1 1/2 – 2 cups strawberries, chopped up
  • 1 cup blueberries
  • 1 tablespoon sugar, divided
  • lemon or lime juice
Preheat the oven to 170F/80C. 

For the first part you can do it one of two ways, depending on what kind of blender or food processor you have.  I found it easier to cook down the strawberries a little bit with the sugar and squirt of lime juice, then add them to the blender.  You can also skip this step and just add the chopped strawberries directly to the blender without cooking, but you may need more lime juice to help with the blending,

Blend strawberries with 1/2 tablespoon of sugar and a squirt of lime juice until very smooth.

Spread blended strawberries over a baking sheet with high sides.  Ideally, you would first cover the baking sheet with parchment paper, but we didn’t have a big enough piece, so we used cooking spray instead.  It worked out just fine!

Next, cook the blueberries until they pop and are soft.  Blend blueberries with sugar and lime juice until smooth. Add to baking sheet with strawberry blend and swirl around in an even layer.  You will have to use a flat spatula to make sure you evenly spread the mixture, so it cooks evenly as well. If it’s not even you will have thin parts, as I ended up with in the photo below!

Bake in preheated oven about 4 hours.  Start checking for done-ness around 3 hours 15 minutes, it should start to feel dry and maybe a little sticky, but not soft. Don’t over bake or it will start to have a “burned” taste and become brittle.  When done, remove from oven and transfer to clean parchment paper.  Slice up the leather into strips and then roll it up using the paper as a wrapper.

The fruit leather is a great snack and you can use it on the go by taping or wrapping the rolls up with string!  We ate a lot of ours right away, but we saved several rolls and they were still just as good the next day.

You can make fruit leather with so many different combinations, it would even be a great way to use up extra fruit you have!  It’s also nice to know exactly what’s in it since you can control the ingredients, and can be confident there are no preservatives or food dye in your snack! You can also chose to add less sugar or even honey as a sweetener, if you desire.

Recipe:
πŸ‹ 1 cup boiling water
πŸ‹ A 3-ounce package lemon jello or similar gelatin dessert mix 
πŸ‹ 1/2 cup tequila 
πŸ‹ 1/2 cup limoncello
πŸ‹ shot syringes or shot cups 

Mix boiling water with lemon jello and stir until fully dissolved. Add alcohols and stir. Divide between syringes and transfer to fridge to set, about four hours. Don’t forget to put the caps on the syringes!

πŸ‹ Makes 12-15 shots depending on the size syringes/cups you use! (The ones in the video are 1.5 ounce ez-inject syringes)

Recipe: (makes 28-30 shots)
❀️ 2 cups of water and 3 cups vodka, divided 
🀍 3-ounce boxes jello mix in blue and red (I used cherry)
πŸ’™ 1 cup white Gatorade 
❀️ 1 packet Knox gelatin 
🀍 white food coloring 3-5 drops, or as desired 
πŸ’™ ez squeeze shot cups

Make it!
πŸ’™make the blue layer- mix 1 cup boiling water with blue jello. Add 1 cup vodka. Divide between shot cups, transfer to fridge to set, at least a few hours. 
🀍make white layer- pour 1 cup Gatorade into saucepan. Sprinkle Knox over liquid and let it bloom for a minute. Turn on heat and bring to just a boil, stirring a little. Remove from heat and add 1 cup vodka. Add food coloring if desired! Divide between shot cups and return to fridge to set. 
❀️ make red layer- repeat steps from blue, but with red jello! Transfer to fridge to set before serving. 

Be sure to let each layer fully set before adding the next one! Cheers!

I added a drop of white food coloring to every other color to make the layers pop and change the hue a little, but this is optional! Basic recipe: (makes 25-28 shots depending on how full you make them)
🌈 1/2 cup water and 1/2 cup vodka for each layer 
🌈 A 3-ounce box jello mix in each color of the rainbow

🌈 For each layer: mix 1/2 cup hot water with jello mix, stirring well until dissolved. Add 1/2 cup vodka. Divide between shot cups, just a little in each cup. Set in fridge for a few hours before starting the next layer
