Carrot Cake Dip with Easter Bunny Chips!

Hippity hoppity Easter is this month! Recently Carter has been on a carrot kick, he loves them! I actually don’t really like carrots so I never bought them, but I noticed he always took carrots for snack at playgroup and such, so I started buying them and he just eats them up! Carter and I whipped up this delicious dip using carrots, which is perfect for Easter- Carrot Cake dip! To make it even more festive we made Easter bunny chips to go with the dip. But, beware, it’s very sweet so be sure you have someone to share it with!

Carrot Cake Dip with Easter Bunny Chips

You will need:

  • 1 8-ounce block of cream cheese (allow to soften about 20-30 minutes before mixing)
  • 1/2 cup shredded carrots
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1 tsp cinnamon (I always like to add an extra dash!)
  • 1/4 tsp nutmeg
For the chips:
  • flour tortillas
  • cooking spray
  • cinnamon sugar mixture 
  • Easter bunny cookie cutter (or other shapes, whatever you’d like!)
Parent pre-step: shred the carrots ahead of time, unless you kid can use the shredder safely!

Measure out all the dip ingredients and add everything expect the carrots to a mixing bowl.

Mix everything together, mixing well.

Add the carrots and fold in. “Folding” is a new technique we learned this week, which proved to be very useful as Carter usually likes to mix with gusto!  It was helpful to explain what it means to fold in the carrots and let him try it so he realizes not everything has to be mixed vigorously!

That’s it for the dip! Cover with some plastic wrap and pop it in the fridge to cool off until you’re ready to eat it. I also decorated it with some carrot twirls, but you don’t have to do that part!

For the chips, cut the tortillas using bunny or other shaped cookie cutters (we also used carrot shapes!).  Be sure to press down hard to cut all the way through. Alternately, you could just cut the tortillas into triangles.

Spray the chips with cooking spray of choice then sprinkle with cinnamon sugar mixture. Bake at 350F for about 5-7 minutes, or until desired crispness.

Serve together and enjoy!  The dip turns out really sweet and pairs well with the chips! You could also use graham crackers or similar cookies, carrot slices or even spread it over some cut up gingerbread cake.  So many possibilities!  I personally found the carrots to be a little thick, so next time I would use the finer grating holes, but it’s really a personal preference!

Recipe:
🍋 1 cup boiling water
🍋 A 3-ounce package lemon jello or similar gelatin dessert mix 
🍋 1/2 cup tequila 
🍋 1/2 cup limoncello
🍋 shot syringes or shot cups 

Mix boiling water with lemon jello and stir until fully dissolved. Add alcohols and stir. Divide between syringes and transfer to fridge to set, about four hours. Don’t forget to put the caps on the syringes!

🍋 Makes 12-15 shots depending on the size syringes/cups you use! (The ones in the video are 1.5 ounce ez-inject syringes)

Recipe: (makes 28-30 shots)
❤️ 2 cups of water and 3 cups vodka, divided 
🤍 3-ounce boxes jello mix in blue and red (I used cherry)
💙 1 cup white Gatorade 
❤️ 1 packet Knox gelatin 
🤍 white food coloring 3-5 drops, or as desired 
💙 ez squeeze shot cups

Make it!
💙make the blue layer- mix 1 cup boiling water with blue jello. Add 1 cup vodka. Divide between shot cups, transfer to fridge to set, at least a few hours. 
🤍make white layer- pour 1 cup Gatorade into saucepan. Sprinkle Knox over liquid and let it bloom for a minute. Turn on heat and bring to just a boil, stirring a little. Remove from heat and add 1 cup vodka. Add food coloring if desired! Divide between shot cups and return to fridge to set. 
❤️ make red layer- repeat steps from blue, but with red jello! Transfer to fridge to set before serving. 

Be sure to let each layer fully set before adding the next one! Cheers!

I added a drop of white food coloring to every other color to make the layers pop and change the hue a little, but this is optional! Be sure to let each layer set before going on to the next. #jelloshots #pride #rainbow #jellyshots 

Basic recipe: (makes 25-28 shots depending on how full you make them)
🌈 1/2 cup water and 1/2 cup vodka for each layer 
🌈 A 3-ounce box jello mix in each color of the rainbow

🌈 For each layer: mix 1/2 cup hot water with jello mix, stirring well until dissolved. Add 1/2 cup vodka. Divide between shot cups, just a little in each cup. Set in fridge for a few hours before starting the next layer
