I’ve been wanting to try to make homemade pasta for awhile now, and ravioli is one of our favorites! This is a fun recipe to get your kids involved in the kitchen. It involved a lot of steps that kids are able to help with, and it can be a little messy! Since we are in Italy on vacation this week, I thought it was the perfect timing to share this recipe! Let’s make some pasta!
Homemade Spinach and Cheese Ravioli
You will need:
- 1 1/2 cups flour (pasta flour if you can get it)
- 2 eggs
- 1/4 teaspoon salt
- a little bit of water
- a ravioli press or pasta cutter
- extra flour for the cutting board
For the filling:
- 1 cup frozen spinach, thawed and chopped
- 1 cup shredded mozzarella cheese
- 1/3 cup Parmesan cheese
- 1 small container of ricotta cheese
Add flour to a large bowl and create a dip in the middle, like a volcano. Add eggs and salt to the middle and then mix the flour into the middle. Knead and mix until the dough comes together. Knead for a couple more minutes then form into a ball and allow it to rest for about 30 minutes.
In another bowl, mix together all the filling ingredients and set aside.
TIP: Be sure to chop the spinach before adding it to the mix, otherwise the long strings of spinach will make it hard to scoop the filling onto the ravioli later!
There are a couple of ways to make the actual ravioli, depending on what type of equipment you have. Here is what works best for us. Divide the dough in two and set aside one half. Generously flour a large cutting board and your hands. Flour a rolling pin. Roll the dough out on the cutting board as thin as possible. The thinner the better! If you happen to have a pasta roller, that would be ideal. We do not, so we just used a regular rolling pin and I’ll admit our ravioli turned out a little thick!
After you roll the dough, cut your ravioli using a ravioli cutter. We have a square shaped one. Repeat until all the dough is cut, reforming and re-rolling the dough out as necessary. Do this again with the remaining half of your dough.
Lay out half of your ravioli squares and scoop filling out onto each one. Use a pasta brush to brush water (or egg wash if you prefer) onto the edges on each one. Top each one with a second ravioli square and press the edges together to seal each side. You can also use a fork to press the dough together if it doesn’t stick as well as you’d like.
To cook: boil water in a large pot. Add raviolis and cook in boiling water 4-5 minutes until done. They will get puffy and rise to the top when they are done. Serve with sauce of choice and enjoy!
