It’s almost Halloween which I think is the perfect time to introduce a new jello shot! These pumpkin juice jello shots are inspired by the drink of the same name from Harry Potter. Besides Butterbeer, Harry and friends often drink pumpkin juice and it’s a popular drink mentioned at meals in the Great Hall! They serve this juice at the Wizarding World restaurants at Universal Studios, and the flavors I used are inspired by that version.
If you enjoy pumpkin spice flavored drinks (and food) you might also enjoy this shot! I felt that using real pumpkin puree would be a bit too much for the shots and would make them gloppy and thick. Instead I went for the pumpkin flavor using pumpkin pie spice. The main flavors in the Wizarding World version are apricot and apple so those are the base for this shot! Read on for the recipe and how to incorporate all the flavors!
Pumpkin Juice Jello Shots
Ingredients
- 1 3 ounce box apricot jello (can find on amazon or at Walmart)
- 1 cup apple cider
- 1/2 tablespoon apple pie spice
- 1 cup vanilla or whipped cream vodka
Instructions
- In a small sauce pan stir together apple cider and pumpkin pie spice. Bring to a boil, stirring a few times while it cooks.
- When it comes to a boil, remove apple cider mixture from heat. Pour it through a fine strainer to remove spice grains (this helps the shots to not be gritty)
- Mix strained apple cider mixture with the apricot jello, stir several minutes to fully combine and make sure jello is dissolved.
- Add vodka and stir.
- Divide shot mixture into 2 ounce shot cups. Transfer shots to fridge to set, at least 4 hours. Cover with lids if you plan to bring them somewhere else, or to keep them for a few days in the fridge.
Notes
-Some of the spices will make it through the strainer and stay in the shot mixture. They will sink to the bottom as the shots cool and set in the fridge.
-You can add more pumpkin pie spice for a stronger flavor if you want!
